Spicy Mexican Cucumbers: Keto Snack

Cucumbers are very low in calories and are a healthy snack.

The cucumber is not a vegetable but a fruit!

Even though it is a fruit, a peeled cucumber is almost zero sugar and only about 45 calories.  A cucumber is about 95% water.

High in Vitamin K and very low in sugar, cucumbers can be included in any diet.

Make this Spicy Mexican Cucumber recipe and keep them stored in your fridge.

They are keto-friendly and effortless to prepare!

The fresh lime juice gives it a tangy taste and also helps preserve them for a few days in your fridge.  That’s if you don’t eat them all on the same day!

Don’t worry about them being overly spicy.  You can use as much or as little Tajin as you want.

Tajin

What is Tajin?

Tajin is a red powder seasoning of chili, lime, and salt.  It is made in Jalisco, Mexico.  It is used on fresh fruits and corn to add eye appeal and zest of flavor. They make a regular and low sodium version.

How to Make Them

I used 3 good-sized cucumbers. Peeled them. Rinsed them and then sliced them ¼ inch thick using a mandolin slicer.

The mandolin slices them quickly and easily into perfect slices. 

If you don’t have a mandolin slicer, no worries!

You can also cut them using a good knife. 

Place them into a container and sprinkle them with tajin. Using your hands, mix them around to evenly distribute the tajin.

Next, add fresh lime juice. About two or three limes should be enough. You can add as little or as much to your liking.

I then covered the container.  Make sure it is a tight-fitting container so it doesn’t leak.  Turn upside down a few times to distribute the lime juice and tajin. 

Place in your fridge for a few hours to chill.

Ingredients
  

  • 3 Cucumbers
  • 1 Tablespoon Tajin
  • 2 Limes

Instructions
 

  • Peel and rinse the cucumbers.
  • Slice to 1/4 inch slices using a mandolin slicer or a good kitchen knife.
  • Sprinkle tajin on sliced cucumbers. Mix with your hands to distribute.
  • Add fresh lime juice on top of limes. Toss to distribute.
  • Place into a storage container with a tight-fitting lid and chill in the fridge for a few hours.
