Honey Roasted Sweet Potatoes

The delicious and nutritious sweet potato.

This tuberous root vegetable is loaded with vitamin A. In fact, an average-sized sweet potato will give you 400 percent of your daily recommended vitamin A.

The sweet potato, also known as a yam, is not just a side dish dessert for Thanksgiving anymore.

After trying this recipe, you will be eating sweet potatoes all year round!

For this recipe, I used 2 average size sweet potatoes.

Peel them and rinse them.

Cut them up into chunks. They don’t have to be small. I prefer them a little chunky as they will soften up after being roasted.

Set your oven to 425 F. Place the sweet potatoes in a greased baking dish.

Top with 4 tablespoons of butter. Drizzle with honey to your liking. I used about 3 tablespoons of honey. Then top with crushed walnuts.

Here is an easy way to crush the walnuts. No sense in putting such a small amount in a food processor.

Put a 1/4 cup of whole walnuts into a small baggie. Give it a few whacks with a rolling pin

Place the baking dish with your sweet potatoes, butter, honey and crushed walnuts into the oven at 425F.

Set your timer for 15 minutes. After 15 minutes take the baking dish out of the oven and give everything a stir. Making sure to coat the sweet potatoes in the melted butter and honey mixture.

Put back in the oven and set your timer for 15 minutes again. After 15 minutes take the baking dish out again and give it one last stir. Almost done! Put it back in the oven for 5 final minutes.

After 15 minutes, take out and gently toss the sweet potatoes, making sure to coat evenly.

Once done take out and serve in a small serving dish. You can drizzle with more honey and add more crushed walnuts on top.

I like to sprinkle a little kosher salt on top!

Ingredients
  

  • 2 Sweet Potatoes
  • 4 Tablespoons Butter
  • 3 Tablespoons Honey
  • 1/4 Cup Crushed Walnuts

Instructions
 

  • Preheat oven to 425F
  • This recipe uses (2) average size sweet potatoes.
  • Peel the sweet potatoes, rinse and cut into 2" chunks.
  • Grease a 9" x 13" baking dish with butter. You can spray with PAM if you have it.
  • Place the cut sweet potatoes into the baking dish. Top with butter and crushed walnuts.
  • Set timer for 15 minutes. When timer goes off remove the baking dish from the oven and gently toss the sweet potatoes with the melted butter / honey mixture. Put back in the oven and set timer again for 15 minutes. Repeat the gentle tossing of the sweet potatoes. Then return to the oven for 5 more minutes.
  • After roasting for 35 minutes remove from the oven. Let cool a few minutes and serve. You can drizzle more honey and add more crushed walnuts if you like. Also, be sure to sprinkle a little kosher salt on top! Enjoy!
