The Secret to “Easy to Peel” Hard Boiled Eggs

Why are hard-boiled eggs such a pain in the butt to peel?

I and everyone else I know has struggled with this for years.

Well, today is your lucky day!

No, I won’t tell you that you need to add vinegar, lemon juice, or baking soda to the water while boiling.

This surprisingly simple solution to easy peeling hard-boiled eggs is detailed below.

Plus, a bonus recipe for a delectable “Spicy Devilled Egg.”

Here We Go!

Step 1: Start with a saucepan filled halfway with water.  The size of your pan depends on how many eggs you want to boil.  For this demonstration, I will be using three eggs.  I am using a 2-quart saucepan. Bring the water to a boil.

Step 2: An egg has a flat side and a pointed side.  Take your egg and gently tap the flat side on a hard service to crack the egg gently.

This part will take some practice.  It will feel like the egg will open up and run out.  It won’t.  You want to use enough force to crack the shell.

Step 3: Place the eggs into the boiling water.

You can carefully do this by hand or use a long-handled-serving spoon.  Reduce to medium heat.

Step 4: Set your timer to the time of your desired doneness.

14 minutes is my preferred time. 

The time to cook your egg is your personal preference.  Anywhere from 10 – 15 minutes seems to be the preferred window of time.  Again, you will have to decide how well cooked you like your eggs.

Step 5: Take the saucepan with eggs to the sink when the timer goes off.  Carefully empty the hot water into the sink and run cold water on the eggs.

After 10 seconds, the eggs should be cool enough to grab and start peeling. 

Gently tap the eggs on the sink or countertop to crack the eggs all around.  The egg may still be too warm to handle, so peel the egg under a slow stream of cold water.

You will notice that the shells will come off very quickly and in large pieces. 

Before adding them to the boiling water, cracking the eggs lets water seep into them.  Cooking the eggs while creating less sticky surface tension on the whites.

Note: If you prefer, let your eggs cool in the saucepan or remove them and place them in a bowl to cool down for later use.

Now that you have your eggs peeled.  Let’s make something yummy!

Take a sharp knife and slice the egg in half lengthwise from the pointy side to the flat side.  You will have two halves now. 

Complete this step for all your eggs.

Take a teaspoon and scoop out the center yolk.  Put them into a small bowl.  I like to use a cereal bowl.

Use one tablespoon of mayonnaise for every yolk.

If you have six eggs, then you need six tablespoons of mayonnaise.

Using a fork smash the yolks while mixing in the mayonnaise.  Smash and mix until it is a somewhat smooth and uniform color.

Time to stuff this mixture back into the egg halves on the plate. 

Using the same teaspoon you used to scoop out the yolks, start stuffing the eggs with the yolk and mayo mixture.

Use your finger to push the mixture off the spoon into each egg half.  It doesn’t have to be perfect or pretty.  We will make them look pretty when we dust them with paprika later.

Once the egg and mayo mixture is evenly placed onto all the egg halves, we can start with the next step.

Dust each egg with paprika.  Use as much or as little as you like.  Paprika does not have a lot of flavor but does add a lot of color and appeal.

Next, sprinkle the crushed red pepper on top of the eggs.  Use your discretion on how little or how much you want.  I like spicy, so I use it liberally.

Ingredients
  

  • 3 Eggs 
  • 3 Tablespoons Mayonnaise
  • Paprika
  • Crushed Red Pepper

Instructions
 

  • Hard Boil your eggs as described in this blog post.
  • Using a sharp knife cut your hard boiled eggs in half. Scoop out the cooked egg yolks into a small bowl. Add 1 tablespoon of mayonnaise per yolk. Mash and mix the cooked egg yolks with the mayonaise.
  • Using a spoon, divide the egg & mayo mixture between all the halved egg whites.
  • Dust with paprika to your liking. Sprinkle with crushed red pepper. Season to taste. Enjoy!
